My cheese sandwich is better than yours

I am exceptionally Arab about my food. Or maybe I should say exceptionally Levantine: I love my white cheese. I love my olive oil. I love my tomatoes, my olives, my thyme, and my bread. 

They are at the very base of my life, my childhood, my experiences.

My current favorite sandwich is a Moose invention. 

The secret of this sandwich is the bread. You must get a thyme-sprinkled loaf, preferably from Abella, who have the best bakery in Amman.

Step one: bread and tomatoes

Whether you use cherry tomatoes or regular ones is up to you. I feel like cherry tomatoes give a nice tangy flavor to food. Like I mentioned, the real secret is in the bread.

Step two: the cheese

The cheese should most definitely be white, aside from the fact that yellow cheese is disgusting.

We get some cheap Shami-brand “sweet poiled cheese”, and it’s actually absolutely delicious. Make sure the chunks are large though as this cheese tends to be over sweetened and thus slightly flavorless.

Where does one start with describing the amazingness of olive oil? How can such a simple liquid be so rich and aromatic?
 
I love olive oil. My favorite food as a child was khobzeh bzeit, which translates to bread in olive oil. To this day, my de facto snack is a slice of freshly baked bread dipped in oil and sprinkled with salt.  

Step four: some layering

I usually add nothing more than sliced black olives. Other times, I add an extra dash of thyme. 

Step five: scorch a little .

Do not eat this sandwich without toasting it first. I prefer mine slightly scorched, it adds a nice woody scent.

    You were very close to beating my version of that sandwich. I will be kind enough to tell you my secret ingredient (Not totally mine as I stole it from a place here called Panino’s):

    Ever heard of Tapenade?

    It is basically black olive paste with garlic, olive oil and thyme. There are many versions of it: some with parsley and caper, some with Parmesan cheese, some with anchovies (Eww IMHO), and some with Sun Dried Tomatoes which is my absolute favorite. Keep mixing up some or all of those into a fine paste until you find your heavenly version of Tapenade. This sandwich will never be the same again.

    And thank you for the late dinner I’m gonna fix right now ;)

    Guess what? i had that same sandwich for breakfast today (exactly the same ingredients! coincidence? ! .. didn’t make it though..i i took it “salbta” from a girl at work =)..
    and yes it was heavenly yummy!

    “I am exceptionally Arab about my food.” That was exceptionally a feel good moment :) You know what I like most about Levant sandwiches is its simplicity. American and Mexican sandwiches are usually overstuffed with ingredients. You have to see what people put in their Subway sandwiches.

    Yellow cheese, in all it’s forms, is absolutely awful. I’m glad you guys like this post, and i have to apologize about the late night snack :) honestly, I made it to put in the fridge to eat in the morning ;)

    I think I’m ready for a midnight snack now Roba, and although I have no access to “sweet poiled cheese” (that was classic), I will definitely include the olive oil, za’tar, and tomato. You get extra points for the tomato description/preference for cherry!

    I think you can find it here (don’t know about Amman) but it cannot be compared to the fresh one. It can be stored for a long time in the fridge, nearly a month, and is really easy to make. Try spreading it over an omelette if you are into those.

    There is a famine taking place inside me. I hate how much I love food :\

    olives are totally awful and their stinking so called “juice” is vile.
    I avoid those gruesome ingredients all the time, I make sure to not even touch any of those.

    me and my boyfriend call those disgusting items “poison fruit” and “poison”.

    tomatoes, cheese and thyme are tasty =)
